Royal Spelt Snacks B.V. has a first in the Netherlands, organic croquettes and bitterballs of spelt . "We are the first and only one in the Netherlands", says Fabienne Muller, who runs the company together with her husband Michael Kapoen.
"Over the past year we have noticed that the demand for vega snacks has increased enormously," says Muller. "This year we're selling 28% more vega(n) products than last year. The newest snack is the vegan oyster mushroom bitterball. "We launched the bitterbal at the Biobeurs 2020 and it was an instant success among vegans, vegetarians and meat eaters alike. We notice that restaurants and hotels increasingly want to distinguish themselves with distinctive and sustainable products. Our snacks are produced according to our principles: organic, no artificial colors, flavors and 100% spelt".
Capon complements: "We started making croquettes five years ago because I hadn't eaten a croquette for a few years because of an intolerance for wheat. The artificial additions of croquettes also started to bother me. As a former chef I started experimenting with spelt. These spelt croquettes were so popular with friends and acquaintances that my wife encouraged me to sell them to the hospitality industry and caterers. I produce and invent the recipes, Fabienne does the sales. The latest vegan recipe I'm working on right now is the vegan seaweed bitterbal that we want to launch at the end of this year".
