Pulsemaster BV from Bladel has introduced an effective new pulsed electric field (PEF) pilot-scale batch system, under the brand name ‘Solidus’. The system can be used to determine the effects of PEF on whole potatoes in the production of fries, crisps and potato-based specialities. Now, for the first time, the potato-processing industry has an instrument that assesses the impact of PEF on plant cell viability in intact plant tissues or solid objects, such as whole potatoes, before the industrial PEF system is installed in the production line. The customer can determine the potential return beforehand, either for the entire production process of potato-based specialities or for ingredients such as cassava, beetroot or carrots.
