Meatable cuts cultivated meat production time in half

  • 25 March 2024

Meatable has achieved a breakthrough in meat cultivation technology. This development promises to halve production time and reduce costs, marking a significant step forward in the commercialization of cultivated meat.

Meatable announced that it is now capable of transforming pluripotent stem cells (PSCs) into high-quality fat and muscle tissue in just four days, a reduction from the previous eight days required. This acceleration is unparalleled in the industry. It paves the way for large-scale production of cultivated meat at significantly lower costs than current standards.

The key to this advancement is Meatable's patented Opti-Ox technology. This method reduces the time needed for cell differentiation by half. Consequently, fewer bioreactors are required, lowering capital expenditures and enabling more efficient use of production space. The process also requires less labor, energy, infrastructure, ingredients, and water, making it not only cost-effective but also more sustainable for the environment.

Step towards sustainability

Daan Luining, co-founder and CTO of Meatable, emphasizes the significance of this breakthrough. According to Luining, this development brings the company closer to fulfilling their promise of producing cultivated meat efficiently and at scale. The goal is to provide a solution for real meat without animal suffering or environmental damage. This reduction in production time is a crucial step in achieving this goal.

The quality of the meat

The technique developed by Meatable allows cells to be differentiated into real fat and muscle tissues within four days. This results in meat with superior flavor and texture, fully matured with the right level of fiber formation, protein, fat accumulation, and key meat flavors. This process is approximately 60 times faster than traditionally rearing a pig for pork.

Meatable recently offered tastings of their cultivated pork sausage at an event in Singapore. The company aims to bring its products to market in restaurants later this year. Meatable has also been the first cultivated meat company to submit a dossier to the Dutch government for conducting tastings in Europe. Plans for expansion to the United States are set for 2025.
