Kipster develops Vegan egg: VEGGS

VEGGS is a liquid substance consisting of numerous ingredients, including yeast and soy protein. You can make an excellent scrambled egg with it. 

Superb mouthfeel

For more than two years the chicken farmers of Kipster have been secretly developing the vegan egg. It is a long way to imitate the unique mouthfeel of a scrambled egg with vegetable ingredients. To get to where the vegan egg is now, Kipster works together with food technologists from TOP BV, students from Wageningen University, top chefs and numerous other parties, including Flevo Campus.

Ruud Zanders, co-initiator: "In the laboratory we do the same as on our farm. We have vegetable raw materials and we make an egg from them. On the farm we put those raw materials in a chicken. VEGGS does not require an animal to be exploited and if in the future we manage to provide our food with far fewer animals, or perhaps even no animals, VEGGS will give us the opportunity to still have a delicious scrambled egg for breakfast".

World Animal Day 2021

The vegetable egg now lies in the laboratory. Refining, scaling up and building a production facility, the Vegan Farm, are the next steps. Kipster aims to have VEGGS in the supermarket in a year's time. On World Animal Day 2021, the Netherlands will be able to have breakfast with scrambled eggs that do not require chicken.
