Van Gelder is making waves in the market with a first: plant-based foie gras. This innovation, unveiled at Gastvrij Rotterdam, responds to the growing demand for sustainable and animal-friendly products. The Dutch supplier of potatoes, vegetables, and fruit is offering a plant-based alternative that closely mimics the taste and texture of traditional foie gras. The product promises a luxurious culinary experience without the ethical concerns typically associated with foie gras production.
Van Gelder’s plant-based alternative has been carefully developed with attention to both taste and ingredient sourcing. Cashews, cocoa butter, coconut oil, and truffle oil form the foundation of this innovative product. These thoughtfully selected plant-based fats and flavours create a creamy texture and deep umami taste. The plant-based foie gras is aimed at foodservice professionals who want to combine luxury with sustainability, offering a credible alternative to traditional foie gras without compromising on quality.
With this launch, Van Gelder positions itself as a key player in the plant-based food industry. The family-owned company, which started as a local farmer, once again demonstrates its innovative capabilities, marking an important step towards a more sustainable future for the hospitality sector. Visitors to Gastvrij Rotterdam can experience this plant-based foie gras for themselves on the 23rd, 24th, and 25th of September. In addition to the foie gras, Van Gelder is also presenting 16 other new plant-based products, including salmon burgers and pâté.
