On Thursday 27 January, the Netherlands Bakery Centre (NBC) presented the Trend Report Bakery Sector. The report contains a number of figures about the bakery sector, and also analyses the strengths and weaknesses of the branch and mentions opportunities and threats.
A number of strengths that are mentioned are: a growing share of artisanal and starting entrepreneurs, knowledge, experience and craftsmanship throughout the chain and a stable to slightly rising sector in terms of volume, spending and employees. The NBC mentions as weaknesses: an annual decrease in the number of traditional bakery branches, the growing ageing of the sector and irregular working hours.
Opportunities include: growing interest in new bakery courses, more attention for local products and bread as the basis of our diet. And a number of threats that were mentioned: decrease in the number of shops of fresh specialists, night work and the heaviness of the work are seen as negative and a decreasing influx of graduates in both industry and trade.
