The Zwamcijsje is the modern sausage roll. The smell, colour and taste that make your mouth water, but plant-based and with a lot less fat.
Mendelt Tillema devised the Zwamcijsje with fellow student Rick Houtepen during the Meat Technology and Alternative Proteins course at HAS University of Applied Sciences. During the course, students are challenged to develop a new product in order to put theory into practice.
The starting point for the development of the Zwamcijsje is to go beyond vegan. Vegan is of course popular but it says nothing about the quality, nutritional value or sustainability of a product. By choosing mushrooms instead of soy or meat, the Zwamcijsje has a fantastic flavour and bite and that with a much lower fat content. Moreover, the mushrooms grow on straw in the Netherlands, making the filling local and circular as well.
But it was not just an idea, the Zwamcijsje is now being produced and has been available at Appèl at HAS University of Applied Sciences since October 2022.
