Steam boilers make the difference

When you enter the premises of catering company Uitgekookt, you immediately taste the atmosphere, the innovation. Future-oriented cooking is key here. The electric steam boilers from Scharff Techniek are of great added value for Uitgekookt.

Uitgekookt opened the doors of a brand new company at the Manenberging in IJsselmuiden at the start of this year. Before that, the catering company with about 100 employees was located a few hundred metres down the road. With over 5,000 square metres of space, the building is impressive. Multiple innovations come together here. Owner Johan van Marle is happy with the modern building: “It is a building that fits with the times. Gasless, with solar panels. Maximum heat extraction is the common thread. The energy extracted is returned to the underfloor heating system, for instance”.

Everything fresh

Uitgekookt is a family business with a long history that dates back to 1830. It consists of three pillars: meal service, catering and barbecue, and events. ‘Fresh’ is definitely paramount: “Everything we use here is fresh. Our 20 cooks cook from the basics”. Every day, at least ten thousand fresh meals efficiently leave the building on their way to customers, who can choose from 20 dishes every week. “Uitgekookt also stands for pure and tasty food. We try to get as many fresh ingredients from local businesses as we can. This is not possible for everything, but it is our approach.”

Partnership

It seems obvious, but if you cook that many meals every day, you need efficient boilers. That was one of the biggest challenges to overcome before this impressive business premises could see the light of day. “Indeed, that was a very important condition. We made it happen, thanks to our partnership with Scharff Techniek from Utrecht, a specialist in electric steam boilers. He has the following to say about that partnership: “A reliable partner is crucial to our process. Moreover, a good relationship is essential. The Scharff team did a great job”.

Uitgekookt now has two steam boilers from Scharff, complete with an advanced control room from which the boilers are controlled. “The boilers fit perfectly with our gasless future,” Johan emphasises. “Think about it. More and more industrial sites are being delivered gasless. By 2050, everyone, including the business world, needs to be climate neutral. One of the major advantages of these boilers is the time savings for our chefs. The food cooks much faster. Moreover, that also yields great end products. Take broccoli, for instance. Because you cook and cool this vegetable rapidly, the colour remains beautiful. And the taste is fantastic.”

Double wall

The two impressive electric steam boilers from Scharff Techniek have a number of unique features, Johan emphasises. “The boilers have a double wall containing hot water, with an average temperature of 180 degrees. That heat radiates into the products we cook in the boiler in a smart way.” He enthusiastically shows an example. Today, a traditional sauerkraut mash is on the menu. Just smelling it will get you hungry. “The sauerkraut is cooked in a relatively short time. This is of course very effective. Moreover, the taste stays at a high level.”

Gasless trend

Director Bernard Scharff about the partnership: “Uitgekookt is a great example of a company where we can fully apply our knowledge of steam technology. Prior to the delivery, we had good conversations about the expectations of the planned steam network. The adjustments and our proposals during the installation period were handled well by Johan van Marle. With two of our Certuss E100 electric steam boilers, Uitgekookt is one of our new clients that has chosen a gasless steam installation. It fully suits the social energy debate and is in line with the gasless trend, Bernard points out. “Sustainability, without using fossil fuels, is the motto going forward. Therefore, gasless electric steam boilers are the ultimate solution. A great advantage is that there are no smoke fumes. And the efficiency of the Certuss electric boilers, namely 100%, is always better than gas-powered boilers. Of course, there is the discussion about electricity also having to be generated. Our position is that you have to start somewhere.”
