The SAFERMENT project was recently launched, this project explores the production of dairy proteins without the use of animals. Using precision fermentation technology, microorganisms are genetically modified to produce high-quality ingredients, previously obtained only from animal sources.
The goal? A safe and sustainable protein transition in which animal-free proteins play the leading role. Research institutes and industrial partners are joining forces to realize this 4-year project under the banner of Wageningen Food Safety Research.
Food safety is central to SAFERMENT. From factory to consumer, the entire production chain of animal-free dairy proteins is thoroughly investigated, with special attention to allergenic properties and biochemical differences from animal proteins. The project identifies and mitigates potential food safety risks in new production processes and also gauges consumer acceptance of these animal-free protein sources produced with precision fermentation.
In collaboration with leading companies and institutes, supported by the Dutch Top Sector Agri & Food, SAFERMENT represents an exciting step toward a future in which animal-free dairy proteins become the norm - safe, sustainable and maintaining quality!
