In 2017 Meatless BV started research into fava-beans as a crop to produce plant-based proteins locally in the northern part of Europe. Fava beans have been grown for ages, in the 19th century, Holland produced more than 35.000 hectares. As a protein source, but also as a green fertilizer.
With local farmers' cooperation, CZAV and Rusthoeve extensive research were started into different varieties of this bean. The results were compared to the results in texturizing ability and quality in applications. The project was supported by the Province of Zeeland.
Two years of intensive testing resulted in a range of textured products based on fava beans, both whole food and with higher concentrated protein content. All these products are based on crops that do well in northern European countries. As one of the first companies in the world, Meatless presents a range of new textured products from fava beans. These products work excellent in vegetarian, vegan, and blended products and will be available in different shreds and colours. The company is enthusiastic about the developments in using fava beans and became an expert in this field. Available from September.
