Innovative fiber technology improves plant-based schnitzel

  • 11 September 2024

Schouten Europe is launching a new plant-based schnitzel with enhanced texture thanks to the application of innovative fiber technology. This family-owned company from Brabant, known as a pioneer in the meat substitute market, focuses on delivering a more meat-like structure with a lower environmental impact through this innovation.

The new fiber technology, called NewTextures, has been developed after years of research and is a significant addition to Schouten’s existing Classics range. CEO Niek-Jan Schouten highlights that this technology marks a major step forward for both their business partners and consumers. The improved texture and juiciness make the product more appealing, especially for meat enthusiasts looking for plant-based alternatives.

Reducing environmental footprint

In addition to the improved texture, Schouten is also aiming to reduce the environmental impact of meat substitutes. While these products already have around 50% less environmental burden compared to meat, the texturization process has often been criticized for its high energy consumption. By developing this technology in-house, Schouten reduces this burden, aligning with the growing demand for sustainable and less processed plant-based products.

Meat substitutes remain essential

With the introduction of the NewTexture Schnitzel, Schouten demonstrates that meat substitutes can be both more sustainable and of higher quality. While the company believes in developing unique protein products without imitating meat substitutes, their classic products continue to play a crucial role in convincing meat lovers to opt for alternatives.
