Folkert Fennema, owner of Fennema Food Development, has launched Het complete E-nummer handboek – Van E tot Z. The guide brings together current, factual information on E numbers for professionals in the food industry. The first copy was presented to Hans van Noort, former lecturer and a well-known figure in the bakery sector.
Decades ago, Fennema received a book on E numbers from a test baker, along with the instruction: “Make sure you memorise this information.” That line stuck with him ever since. But the book was never updated. “The information on E numbers has become fragmented, outdated and incomplete. With this handbook, I aim to change that,” says Fennema.
The guide includes all E numbers approved, and recently rejected, by EFSA, along with their applications, legal status, origin and health assessments. Thanks to four practical annexes—by number, alphabet, function and supplier, the book is a useful tool for product developers, quality managers, buyers and label specialists alike.
The handbook helps answer everyday questions, such as: What are the alternatives in case of a raw material shortage? Is a certain processing aid allowed in combination with other ingredients? What information is required on the label?
Fennema also wants to support a factual discussion around E numbers. “There’s a lot of confusion and resistance, but basic knowledge is often lacking. I’ve deliberately steered clear of scare stories and personal views. I only provide factual information so users can form their own opinion.”
