The quality of process water is essential for food safety, especially during the processing of fresh and frozen products. The European Food Safety Authority (EFSA) has therefore developed a new online tool to help companies improve their management of process water. The recommendations are based on extensive research into the risks of microbiological contamination in the food chain.
When analyzing water quality, EFSA experts applied the concept of “fit-for-purpose water,” an approach introduced by the FAO and WHO. This means that water must meet specific requirements, depending on its source and the final use of the food products. In drawing up water management plans, they assessed the water source, potential hazards, and suitable disinfection methods.
EFSA published its recommendations in three scientific reports, focusing on whole fresh fruit and vegetables, pre-cut products, and frozen products. The aim is to help businesses reduce the transmission of pathogens, such as Listeria monocytogenes and STEC, which have caused outbreaks in the EU in recent years.
A key tool in this process is the free app WaterManage4You. Using mathematical models, the tool predicts how bacteria spread and accumulate in process water. This prediction is based on parameters such as water replenishment, chlorine concentration, and bacterial counts. The app offers pre-set scenarios but can also be customized to fit specific business processes.
For food processing companies, scientists, and regulators, this app provides a valuable addition to their existing water management strategies. By simulating preventive measures, companies can minimize risks while also using water more efficiently—an increasingly scarce resource.
