On Wednesday, 29 September, Diviande received the Public Award of Region FoodValley. The concept of Diviande, using leftover meat from sustainable Kipster cocks and laying hens for the production of healthy, tasty 'hybrid' stir-fry strips, convinced the public to choose this innovation.
Kipster has been named the most sustainable farm in the Netherlands in 2020. Laying hens are kept in an animal-friendly way and the roosters are spared. The meat products of Kipster comply with the 3-star Beter Leven Keurmerk (Better Life Certificate). Kipster works towards a closed cycle in all areas. That is why it looked for a way to add value to the remaining meat on the carcasses. In Diviande, Kipster found a partner with whom it was able to give shape to this innovation.
The product developers at Diviande have knowledge and experience in developing meat products, vegetable meat and fish substitutes and hybrid intermediate products. The challenge for the product development in cooperation with Kipster lay mainly in the protein composition of the residual meat. This is different from regular meat and contains a lot of collagen. The option of a complete meat product was therefore quickly abandoned and a hybrid product was chosen.
The final product consists of a special combination of 25% animal proteins from Kipster residual meat and 75% vegetable proteins such as wheat, pea and soya. The sustainability of the product is not only important for the animal part but also for the vegetable part. The vegetable ingredients come from sustainable European growers, such as soya from Austrian soil where 85% of the energy in the processes is renewable.
The hybrid bars are not only sustainable, the product is also healthy. It has an excellent nutritional value: high in protein, but low in fat and salt. The strips are already cooked, so ready-to-eat, and they are suitable for all kinds of stir-fry dishes.
