Cosun introduces vegetable protein isolate from Fava bean

Cosun introduces a promising new product: a protein isolate from the Fava bean. It will be produced in a climate-friendly way, with a unique combination of properties, including a neutral taste, high solubility and good nutritional value. Although this project is in a pilot phase, the first commercial production of Fava protein isolate will take place at the end of Q1 2022. 

Marcel van der Vaart, Business Development Manager at Cosun: "The market demand for dairy alternatives has been growing for years, but it is also difficult to meet all consumer demands. The problem lies mainly in the fact that most vegetable proteins have the unfortunate reputation of having a bean-like, cardboard-like taste. More and more consumers want to eat plant-based products, but if the experience is below expectations, they won't buy the product again. Taste really comes first."

"With our Fava protein isolate, Cosun has developed a plant protein that tastes mild, even at higher doses. The mouthfeel was also perceived as 'soft' and 'creamy' by the test panels. This makes it possible to add larger quantities of protein to a product, which greatly benefits the nutritional value."

Fava guarantees clean label

Fava's test results show that the protein isolate not only tastes neutral, but also scores well with low viscosity and high solubility. This expands the scope of application and enables vegan solutions in a wide range of products. With its Fava protein isolate, Cosun has succeeded in providing the functionality needed to make this emulsion without the need for additional stabilizers.
